Join us for a hands-on introduction to fresh cheesemaking, where you'll learn to make goat’s milk chèvre using simple ingredients and traditional techniques. Together we'll walk through the process from start to finish, exploring what makes goat's milk cheese so uniquely delicious and approachable for home cheesemakers.

Each student will make two cheeses — a classic chèvre and a second variation of your choice (either sweet or savory to suit your own taste). You'll also learn how to wrap and present your finished cheeses for storage or gifting.

You'll leave with two finished cheeses, the knowledge to keep making chèvre at home, and plenty of ideas for how to enjoy and share them.

All levels welcome. All materials provided.

Teacher: Sergio Navarro, The Astral Farm

Growing up, Sergio Navarro split his time between Jalisco, Mexico, and northern California, where he acquired a number of skills for self-sufficiency, including working in automotive, blacksmithing, farming, and general building maintenance. These environments developed his love for tools and what they can accomplish. He enjoys sharing his knowledge of skills that are both practical as well as beautiful art form. Currently, Sergio runs a small goat farm called the Astral Farm with his wife and family in Grass Valley.


Teacher: Rebecca Navarro, The Astral Farm

Rebecca grew up in rural Connecticut, where she spent her summers learning classic homesteading skills like sewing, gardening, and canning from her parents. Now, transplanted to Grass Valley, she enjoys sharing her knowledge of skills that are both practical as well as beautiful art forms. In addition, Rebecca teaches English at Ghidotti High School, and runs a small local goat farm called The Astral Farm with her husband and family.
